Blackberry smoothie bowl, a delicious and refeshing breakfast recipe. The bowl is made in the blink of an eye and it fills really good as well.
It has been some weeks since I made this smoothie bowl for Jens. It was on a Sunday afternoon and it was 30 degrees Celsius and he played his last soccer match of the season. As a surprise I went to watch and I was extremely warm watching in the burning sun. I could not even imagine how hot he must have been running in the burning sun for 90 minutes.
While he was recovering a bit he asked if we could please eat something cold. I drove home as quick as I could and made, with what I had left in the fridge, this refreshing smoothie bowl. Jens liked it a lot and it made him cool down. So a perfect breakfast for the tropical temperatures that are ahead of us.
Preparation time: 5 minutes
Blend time: 2 minutes
Amount: 1 smoothie bowl
- 125 milliliters coconut yogurt
- 75 grams blackberries
- 50 grams strawberries
- 50 grams blueberries
- 25 grams peanut butter
- 20 grams chia seed
- 50 grams raisins
- Chia seed
How to make it?
Put the coconut yogurt in the blender, if you don’t like coconut, you can also use another (plant based) yogurt. Add the washed fruit to it. Next add the peanut butter, chia seed and raisins as well.
Mix for approximately 2 minutes into a smooth and firm mixture. This will be the basis of your smoothie bowl.
Put the smoothie mixture in a bowl. You can now make the topping of the bowl.
I chose to let the flavors of the smoothie come back in the topping. That is why I chose blackberries, blueberries, chia seed and cashews (nuts) for the topping.
You can of course also vary with the topping.
