Greek Yogurt Waffles. These healthy Waffles with mango and honey are gluten free as well. Crispy Waffles that are airy as well and really easy to make.

Food always comes in phases with me, when I really like something, I eat it for weeks until I am completely done with it and eat something else. Porridge is one of those favorites, but the same counts for pancakes and mini pancakes. Just like Waffles by the way, which I hadn’t eaten for a while. Until I saw a very easy Waffle Recipe with someone on Instagram. I transformed it into my own recipe and made a healthy variation of it as well. After some variation with the topping, this one with Greek Yogurt and Mango was the absolute winner. 

But of course you can also use plant based yogurt and different fruit, it all depends on what is in your fridge. And as you can imagine I am currently in a Waffle phase. Lovely because with working from home a lot, I can make the regularly for lunch.

Ingredients

  • 1 banana
  • 1 egg
  • 100 grams buckwheat flour
  • 5 grams baking soda
  • 4 millilitres honey (1/2 table spoon)
  • 5 grams cinnamon
  • 40 millilitres plant based milk
  • Coconut Oil or butter

Topping

  • Greek yogurt
  • Mango

How to make it?

Put the banana in the food processor and add the egg, buckwheat flour, baking soda, honey, cinnamon and plant based milk to it. Mix into a smooth batter, it will be sticky.

In the meantime you can preheat the waffle iron, use a medium setting to bake the waffles.

When the waffle iron is warm, you can divide the coconut oil or butter over the iron. Make sure both the top and the bottom are covered in oil or butter to make sure the waffles don’t stick to it.

Divide about 2 table spoons of batter per side over the waffle iron. It is quite sticky so it doesn’t go very easy. Make sure it is well divided on both sides

Bake them for about 5 minutes and make sure they are done. That also makes them easier to release from the waffle iron.

 

 

 

Cut the mango in really small pieces and divide combines with the Greek Yogurt on top of the waffles and you can enjoy these Greek Yogurt Waffles.
