Seed and nut bread


Seed and nut bread, this banana bread has the structure of a bread and a nice bite because of the fruit and seeds it contains. Besides that the bread fills really good, lovely with some nut butter on top of it.
It has been a while ago, but on Valentines Day I received a package from the Smaakpecialist. In it was also a paleo mix with coconut. This mix contains among other things raisins, mulberries, incaberries, pumpkin seeds and sun flower seeds. I had made some breads from the Rens Kroes On the God book last week, so I knew the kind of ingredients I would need to make this bread. I made a recipe and the bread was perfect after the first time, I also really liked the structure of the bread.
I cut the bread in big slices and put them in the freezer. When I had to go to work I could defreeze 2 parts and I had a healthy lunch. The bread is really delicious already, but with some nut butter on it even better. Sometimes I find it difficult to think of a healthy lunch to bring to work. I barely eat normal bread, not necessarily because I don’t like them, but because I usually get pain in my stomach after eating it. I try to vary with my recipes and when I don’t have inspiration in the evening it is perfect to have a bread like this in the freezer.
The past few days I didn’t have to work and baked a lot. The freezer is filled again. I also regularly have dinner leftovers for lunch that I sometimes like even better the next day. Do you have a nice lunch top?

Ingredients
  • 2 bananas
  • 50 grams Medjool dates
  • 150 grams spelt flour
  • 3 eggs
  • 10 grams baking soda
  • 85 grams paleo mix fruit coconut**From RAW Organic Food (Smaakspecialist)

How to make it?

Preheat the oven on 180 degrees Celsius (372 Fahrenheit).

Put the bananas in the blender. Remove the seeds from the dates and also add the dates. At last add the spelt flour, eggs and baking soda to the blender.

Blend the ingredients in 2 minutes into a smooth dough.

Pour the mixture in a mixing bowl. Add the paleo fruit mix to it. Mix the mix thorugh the batter and make sure it is well divided.

Next put a piece of baking paper in a cake tin and divide the batter over the gin, make sure it has the same thickness everywhere.

Bake the bread for 30 minutes in a preheated oven, pay attention that the baking time may differ per oven.

Let the bread cool down a bit and you can enjoy this healthy, organic bread.
