Approximately 2 weeks ago I went to the Open Day of Kitchen Republic because Emiel from Nutorious Peanutbutter invited me to come. Several food start-ups were here (20 to be precise) all with a unique concept and story. It was a nice afternoon were I tasted a lot of delicious things and saw a lot of nice concepts. Chocolate with peanuts (Choc and Rock), tarts with beet pigment and delicious smoothies.

Like I said I was invited by Emiel from Nutorious Peanutbutter. That is a new peanut butter, because Emiel believed it was time for something different than a peanut butter sandwich. That is why he developed 3 different flavors: chili/sambal, white pepper and honey/cinnamon. All ingredients used in the peanut butters are organic, so I love this product. With Emiel I made the deal to make a recipe with his peanut butter every Friday during the month June. In these recipes you can also replace the peanut butter for a natural (pea)nut butter.

Vegan
Ingredients
  • 35 grams oatmeal*
  • 10 grams grated coconut
  • 10 grams flax seed
  • 5 grams chia seed
  • 35 grams peanut butter (chili/sambal)
  • 200 milliliters oat milk   
    * Can be replaced by a gluten free oatmeal to make the recipe gluten freen.
I used the chili/sambal peanut butter from Nutorious Peanutbutter to spice this recipe up. You can also use natural (pea)nut butter.

How to make it?

Put the oatmeal in a jar. This can for example be an old jam jar. Add the grated coconut, flax seed and the chia seed to the jar. You can also add other seeds if you prefer or spices like for example cinnamon. This way you can make these organic overnight oats completely to your own liking. Mix the ingredients properly.

​​When all ingredients are mixed properly you can add the peanut butter to the mixture as well. Mix the peanut butter through the mixture. Make sure there are no clumps of peanut butter in the mixture, but that it is well divided. This to prevent you have one bite filled with a lot of peanut butter and the next bite without it. I had some difficulty to get all the clumps out, but by using a fork I managed to do it.

​When you have mixed all ingredients properly, the overnight oats are almost ready. You can at last add the oat milk. You can also vary with that by choosing another plant based milk. Your oats are now ready to go into the fridge. The mixture is quite liquid but after a night in the fridge it has become a nice porridge. Put the oats in the fridge for 6 to 8 hours (one night).  You can leave the lid open.

When you wake up the next morning you only have to get your breakfast out of the fridge. You can enjoy your organic, vegan breakfast right away.
