Vegan cacao cookies with nuts

Vegan cacao cookies with nuts, these gluten- and lactose free cookies are easy and quick to make. A super delicious, healthy and very filling snack.

The weekend is almost here and that is the perfect timing to make these delicious cookies. I thought it was time to make cookies again and decided to make them vegan and that went easier than I had expected. You are very soon finished with making these healthy cookies.

What does your weekend look like? Are you going to do something fun or will you have a relaxed weekend. I had quite a busy week at my job, but tomorrow is my mothers birthday. So tomorrow night we will have dinner at my parents and my grandmother will also be there, so that will be a nice evening. Sunday will be a relaxed day to be able to start relaxed on my previous last week before the Holiday.

The coming weeks are busy with parties, birthdays and business at work, with also a fair on Saturday. but after that I will have 3,5 weeks of Holiday and I am extremely looking forward to it. We decided to stay at home and I find it perfect, the most important is that the weather is good and we will see what we will do. 3,5 weeks of nothing but relaxation and maybe working in the garden, I am looking forward to it!

Preparation time: 10 minutes

Baking time:            20 minutes

Amount:                     Approximately 14 cookies

  • 25 grams chia seed
  • 60 milliliters water
  • 30 grams coconut oil
  • 200 grams unsalted hazel nuts
  • 120 grams unsalted cashews
  • 130 grams buckwheat flour
  • 100 milliliters maple syrup
  • 40 grams dates
  • 15 grams cacao



How to make it?

Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Put the chia seed in a bowl with water and let well for 10 minutes.

Melt the coconut oil in a small pan on low heat fire. Make sure it does not melt.

In the meantime crush the nuts very small in the food processor.

When the nuts are mixed properly, you can add the rest of the ingredients to the food processor.

Add the melted coconut oil as well as the welled chia seed (without the water). Mix the ingredients into a firm batter.

Lay a piece of baking paper on a baking tray and make balls of the batter. Make a bit flat and lay on the baking tray.

Next you can bake the cookies in a preheated oven for 20 minutes. Pay attention that the baking time may differ per oven. You can now enjoy these delicious cookies!
