Vegan cacao granola

Vegan cacao granola, a delicious and healthy granola. Perfect for breakfast in your vegan yogurt or almond milk.
​I have already shared different granola recipes with you, a version with peanut butter and one with a lot of seeds, nuts and cinnamon. Both recipes are really delicious, but sometimes I want to try something new after eating the same granola for weeks in a row. That is why I thought of this granola with cacao and believe me this one is amazing.

Since a few weeks I am having a lesson of Body Balance in the gym on Sunday Morning and I like it a lot. The pace is really nice, also for somebody like who doesn’t have a super good stamina and no difficult moves are included. I love to start my Sundays like that and I am usually doing the practices with a big smile. 

After doing my workout I am usually really hungry, the class is until 12.15 so that is time to eat. Somehow I always feel like having a big bowl of yogurt with granola and fruit after my workout. I don’t know why but this returns every week. Unfortunately I ran out of my granola on Sunday morning, so to be prepared I made this vegan cacao granola quickly before I went to the gym. Now I could enjoy my favorite and well deserved lunch after working out.

Vegan
This recipe is not 100% organic, because the nuts are not organically available. All other ingredients are organic in this recipe.
Ingredients
  • 50 grams coconut oil
  • 200 grams oatmeal*
  • 25 grams dates
  • 25 grams hazelnuts
  • 25 grams almonds
  • 20 grams flax seed
  • 25 grams cacao
  • 40 grams agave syrup
* By replacing the oatmeal by a gluten free variant you make this recipe gluten free.

How to make it?
​Preheat the oven on 180 degrees Celsius (372 Fahrenheit). Put the coconut oil in a pan and melt slowly on low heat fire. Make sure it does not boil. When the coconut oil has melted you can set aside the pan. Put the oatmeal in the mixing bowl.

​Cut the dates into smaller pieces. I sometimes use a scissor to cut the dates into smaller pieces that is also really easy. Chop the nuts as small as you like them.

Add the small dates to the bowl with the oatmeal as well as the nuts. You can also make the nuts really small with a food processor if you prefer them really small. You can also leave them bigger if you like a bite in your granola.

​Add the rest of the dry ingredients to this bowl and mix again properly. Make sure all ingredients are covered with the cacao. At last add the melted coconut oil and the agave syrup and mix again. The entire granola mixture should have touched the coconut oil and the agave syrup. Lay on a piece of baking paper on a baking tray.

Bake the granola for 15 minutes in a preheated oven. Pay attention that the baking time may differ per oven. Enjoy this delicious vegan cacao granola.
