Almond Pastry

When I still lived with my parents, my mother used to get a Almond Pastry letter fro Christmas from her job. She though it was way too sweet and my sister doesn’t like almond paste. So my dad and I got to divide the letter and I loved it so much. I liked it even more to put it in the oven a bit to make it nice and warm which gives it an even better flavor. Of course I wanted to have the same flavor with my healthy almond pastry. So I started working on the puff pastry, but that turned out to be harder than I aexpected. I really did my best, but I didn’t manage to make it the way I wanted. I will definitely try it again, but this time I used puff pastry from the store. I did pick good puff pastry from the organic store, naturally and without additions. If you have puff pastry from the supermarket it usually contains sugar or other unnatural addition, so pay attention when buying.

 

Puff Pastry

With this puff pastry I managed to make it and believe me when I say the flavor of this almond pastry succeeds the one from the Bakery. I do also believe that everything tastes better when you know it is healthy. But when this one came out of the oven and I took a bite, it brought me back in time. And the best thing is that this recipe is really easy.

Ingredients

5 slices (vegan) puff pastry
125 grams almond flour
100 milliliters honey

How to make it?

Preheat the oven on 200 degrees Celsius (372 Fahrenheit). Let the slices of puff pastry defreeze. This takes approximately 10 minutes. Make sure they don;t touch each other that can cause them sticking to each other.
In the meantime make the almond paste by mixing the almond flour and honey in a small bowl into a whole.

When the puff pastry has thawed, you can cover the counter with some flour. This prevents the puff pastry from sticking. Also cover the top of the puff pastry with some flour. Lay all five pieces of puff pastry as straight on top of each other as possible and rol with a rolling pin into a flat surface. You can also make 2 smaller pieces if you find one too big

Once the puff pastry has become one flat surface, you can divide the almond paste over it. Leave about 1 centimer of the edges open. Roll the puff pastry into a nice roll. Optionally you can make the folding edges a bit wet.

Bake the almond pastry for about 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven.

You can now enjoy this suger free almond pastry, which tastes the best when you eat it warm out of the oven!
