Spiced Pumpkin Cookies. Baking cookies with pumpkin is really something to do in Autumn. These healthy Pumpkin Cookies with Cinnamon are really quick to make and gluten free as well.
Autumn is definitely the Pumpkin season and that is not only because of Halloween. By spicing the Pumpkin you can perfectly use it in Savory Dishes, like Soup or Stews. But when you use more sweet ingredients and spices, the sweet flavor of the Pumpkin comes out. And you can also make really nice sweet Pumpkin Dishes like these cookies. They are nice and soft and a bit sticky, I love them!
Recipe Spiced Pumpkin Cookies
- 100 grams Pumpkin Cubes
- 80 grams Almond Flour
- 100 grams Rice Flour
- 1 tea spoon of Cinnamon
- 2 cloves
- 1 tea spoon of Ginger
- 1 tea spoon of Nutmeg
- 25 millilitres honey
- 1 egg
- Pinch of Salt
How to make it?
Preheat the oven on 175 degrees Celsius (347 Fahrenheit). Place the Pumpkin Cubes in the food processor (if you use prepackaged pumpkin). Otherwise clean the Pumpkin first, cut into cubes and add afterwards.
Next add the flours, spices, honey, egg and salt to it.
Let the food processor mix the ingredients into a sticky ball. It will take a few minutes.
Place a piece of baking paper on a baking tray. Grab a ball of dough and carefully push onto the baking tray. It is up to you how big you want to make them.
By pushing a bit with a fork in the dough you get beautiful stripes on top of the cookies.
Bake them for 15 minutes until done.
