Lactose free spelt pancakes with coconut. These lactose free pancakes without refined sugars added are the perfect start of your day.
I follow lactosevrij.eu (lactose free.eu) already for a while on Instagram and they share a lot of nice recipes. And as you know I also regularly make lactose free recipes. So when I saw their request for guest bloggers on Instagram I had no doubt and send them a message.
I had thought of these spelt pancakes the weekend before and had made them also and this recipe was lactose free. I like cooperating with others and I liked it that many other people also can read my recipes. That is also why I am super excited about this guest blog.

Put the spelt flour in a mixing bowl. Add the eggs, honey and half of the plant based milk to it. Mix with a fork or spatula. Make sure there are no clumps left and it becomes a real batter.
Mix the rest of the plant based milk in small pieces through the batter. Add some, mix until integrated and add the next bit. You slowly notice the batter getting more think. Continue until all plant based milk is integrated. At last add the grated coconut and also mix through the batter.
You can now bake these organic pancakes. Heat some coconut oil or butter in the frying pan.
Use half a ladle of batter per pancake to make them think. Divide the batter over then pan and when the pancakes start to bubble on the side you can carefully flip them. They are relatively easy to flip without breaking. You can make approximately 9 pancakes with this amount of batter.
I decorated toe pancakes with grated coconut and some agave syrup. Have fun baking and eating these pancakes!
