Chocolate Letters

Sinterklaas recipe, sugar free chocolate letters. A more healthy alternative for that delicious chocolate letter.

Chocolate Letters I love them so much, like this one that I got at work last year. But do I love these letters? Or just the chocolate? I do think that it is the chocolate and that the shape doesn’t matter that much. But the chocolate letters in the store contain so much unnatural additions. That is why I wanted to try to make them myself.

Ok they don’t taste the same as the one from the store, but they taste just as good. Or maybe even better?! I was lucky that there were 2 pieces left for me, Jens had eaten the rest within a day. I can surely say that he liked them. This recipe is actually really easy the only thing you really need is patience. The first time I was too quick with putting the chocolate in the piping bag, because it was not hard yet. What happened was that the chocolate got out of the piping bag at the bottom and the entire kitchen was covered with chocolate. Not really handy. Luckily I had disposable piping bags so I could throw them away. And I tried again with more patience and more result.


Preparation time: 5 minutes
Cooling time:          10 minutes (+2 hours)
Amount:                    2 big letters
Special Products:

  • Refractory bowl
  • Piping bag
  • Baking paper

Ingredients
  • 90 grams cacao butter
  • 45 grams raw cacao
  • ​40 grams honey*

Optional:

  • Small piece of dark chocolate (approximately 15 grams)

* You can replace the honey by a plant based sweetener to make this recipe vegan.

How to make it?
Grab the refractory bowl (or another pan) and a pan. Put some water in the pan and make sure if you put the other pan or bowl in this one, it does not touch the water. Put the pan with water on low heat fire. The water will be warm to be able to melt the cacao butter in the top pan au bain marie.  Put the cacao butter in the top pan or bowl. I added some chocolate to make the mixture a bit more firm.

​When the cacao butter is totally melted, this can take a while, you can put it in a mixing bowl. Add the cacao powder and honey as fast as possible. Stir well and make sure everything is mixed properly and you don’t have clumps in the mixture. Let the mixture cool down and harden. This takes approximately 10 minutes. You will notice if the mixture is hard enough or too liquid. If it is too liquid, it will get out of the piping bag at the bottom.

​When the mixture is in the piping bag you can make the letters. I first made a circle and did it again on top of the first one. I continued until I was out of chocolate.

The mixture is not hard enough to grab and eat. Lay on a piece of baking paper on a plate in the fridge and let it harden for at least 2 hours.

​​You can now enjoy these delicious and healthy chocolate letters.
