Chocolate gingerbread nuts

Sinterklaas recipe: Chocolate gingerbread nuts. These vegan chocolate gingerbread nuts are tastier and healthier than the ones from the store.

It is the beginning of November and that means that Sinterklaas* arrives this month. And even though I am 25 already I like this moment a lot. I also like to watch the Sinterklaas news as a guilty pleasure. It is like a fairytale that I still like. I think I missed the arrival of Sinterklaas for the second time now, I usually have a look to see all those faces of the kids.

My guilty pleasure in this time of year are defintely those chocolate gingerbread nuts. I love them so much! I used to eat a complete bag on a rainy afternoon, but those times are over. I did some research and tried everything to get just as tasty gingerbread nuts, but healthy. It took me some trial and error, but I managed to make these delicious vegan chocolate gingerbread nuts.

*Sinterklaas is a Dutch party with gifts and a lot of sweet treats, you can compare Sinterklaas a bit with Santa Claus in America. Only he comes from Spain with a boat and rides on a horse through the streets. His helpers bring gifts in the night, they walk on the roofs, get through the chimney and put the gifts in the shoes of the children.


Preparation time: 30 minutes
Baking time:            20 minutes
Amount:                     Approximately 450 gramsSpecial Products:

  • 2 baking trays
  • Mixer ​
  • 2 pans
  • Baking paper

Ingredients
  • 125 grams coconut oil
  • 275 grams spelt flour
  • 25 grams almond flour
  • 5 grams baking soda
  • 15 grams gingerbread spices
  • 75 milliliters plant based milk
  • 50 grams agave syrup
  • 100 grams vegan dark chocolate

How to make it?
Preheat the oven on 160 degrees Celsius (320 Fahrenheit). Put the coconut oil in a small pan and melt on low heat fire. In the meantime mix the spelt flour, almond flour, baking soda and gingerbread spices in a mixing bowl. Mix properly.

When the coconut oil has melted you can add that to the bowl combined with the agave syrup and the plant based milk. Mix with a mixer into a smooth dough.

When you have a smooth dough you can roll small balls. Make them approximately the size of a marble. Press a little bit and lay on a piece of baking paper on a baking tray. You can fill approximately 1,5 baking tray.

​Bake the gingerbread nuts for 20 minutes in a preheated oven and let them cool down. Put a pan with water on low heat fire. Put a smaller pan inside this pan and put the chocolate in this small pan. You can melt the chocolate au bain marie because of the warmth from the lower pan.

​When the chocolate has completely melted you can set the fire very low. Get the nuts through the chocolate with a spoon for example and make sure both sides are covered with chocolate. ​

​Lay them back on the piece of baking paper and lay on a plate. Put the plate in the fridge to let the chocolate harden. Continue until you are out of chocolate. Let the nuts harden in the fridge for approximately one hour.

You can now enjoy these delicious healthy vegan chocolate gingerbread nuts.
