HalloweenHalloween is almost here and with that also Autumn. Although it sometimes feels like the Autumn has begun a while ago already. The Autumn and Halloween of course stand for Pumpkins. I never really liked Pumpkin, but nowadays I enjoy Pumpkin very much and I eat it very regularly. Definitely now they also sell pumpkin cubes in the supermarket.
Pumpkin Pancakes?I never made Pumpkin Pancakesthem before before and decided on a free day this week to make them for the first time. I love the combination of pumpkin and spices, so these pumpkins have become a bit spicy. They match well with Autumn I believe. Besides that these Pumpkin Pancakes are low-carb, gluten free and lactose free. They are really quick and easy to make.
Recipe Pumpkin PancakesPreparation time: 5 minutes Baking time: 5-10 minutes per pancake Amount: 6 pancakes Special Products:
- Food Processor/Blender
- Big Frying Pan
- 50 grams pumpkin (cubes)
- 1 egg
- 1 banana
- 50 grams (gluten free) oatmeal
- Cinnamon (1-2 grams)
- Ginger (1-2 grams)
- Nutmeg (1-2 grams)
- Aniseed (1-2 grams)
- Coconut oil or butter to bake
You can now enjoy these delicious Pumpkin Pancakes. Lovely with a little bit of honey and cinnamon on top of it.
