Mini Dutch pancakes with apple and cinnamon, a healthy breakfast recipe with fresh fruit. These Mini Dutch Pancakes are a lovely healthy breakfast that are easy to make as well. You only need a mini pancake pan.
A few weeks later I was on a flea market and hoped to find an old-school mini pancake pan and I did. But that is just the beginning, because how do you even make them and which recipes do you use? After a lot of practicing and experimenting I discovered a delicious recipe last Summer. I must admit that I missed the powdered sugar the first time I tasted them, because I missed some sweetness. I eventually made them with maple syrup and strawberries and that was a Summery combination. The (lactose- and gluten free) recipe is in my E-book.
The time of fresh strawberries is behind us at the moment, unfortunately and because I like to work with fresh and local products from the season I chose other products in the winter. I love the combination of apple and cinnamon and thought that that might be a good combination for the mini pancakes and that was definitely the case. Jens and I love them a lot and eat them every week at least once. With some honey on top you don’t even miss the powdered sugar!
Amount: 2 portions
- Coffee grinder (optional)
- Mini Pancake span
125 milliliters plant based milk
3 grams baking soda
5 grams cinnamon
25 grams spelt flour*
25 grams honey
75 grams (gluten free) oatmeal (flour)
Some coconut oil
Cinnamon and honey to your liking
*By replacing the spelt flour by a gluten free flour you can make this recipe gluten free.
How to make it?
First put the plant based milk in the blender and add the egg, baking soda, cinnamon, flour and the honey to it. If you use oatmeal flour you can add it as well. When you use oatmeal, you can crunch in with the coffee grinder into oatmeal flour. Mix into a smooth batter and you can bake the mini pancakes.
Pour some batter from the blender into the mold and don’t start with too many batter at the same time. Continue doing this until the pan is filled. When they turn brown on the bottom you can carefully flip the mini pancakes with a spoon and bake for another minute on the other side. Lay them on a plate when they are ready and bake the second portion.
When that portion is also ready you can start with the decoration. Cut an apple into pieces and divide over the plates, cover with some honey and cinnamon to complete.
