Peach yogurt cake, a fresh sweet cake that is also very delicious to have for breakfast. The Greek Yogurt makes this cake very refreshing.
Last week I went to the small stand nearby our house where they sell a lot of fresh fruit and they had lovely big peaches. I took them and on the way home I thought about what I wanted to make with them. First I thought about tart, but I soon figured that a cake with Greek Yogurt and peach was a better idea.
Earlier I had made a cake like that with Greek Yogurt and blueberries and I liked it so much that I decided to make a similar cake this time with peach. It was a big success, I liked it a lot but Jens did as well. My grandmothers cake is the best cake ever, but Jens said this one had a similar taste which is a huge compliment. He also told me that if we would have people over it would definitely make them happy as well. So if you are having people over or crave a delicious fresh sweet cake yourself, make this peach yogurt cake.
Preparation time: 10 minutes
Baking time: 60 minutes
Amount: 1 cake (12- 15 slices)
- 2 mixing bowls
- Baking paper
- Cake tin
- 100 grams dairy butter
- 150 grams spelt flour
- 10 grams baking soda
- 2 eggs
- 175 grams Greek Yogurt
- 50 milliliters honey
- 2 big peaches
By replacing the butter for coconut oil and the Greek Yogurt for plant based yogurt you will make this recipe lactose free
How to make it?
Preheat the oven on 160 degrees Celsius (320 Fahrenheit). Put the butter in a small pan and melt slowly on low heat fire.
In the meantime mix the dry ingredients, spelt flour and baking soda in a mixing bowl.
When you have mixed the dry ingredients you can put the eggs in the other mixing bowl, combined with the Greek Yogurt and the honey.
Mix these ‘wet’ ingredients with a spatula carefully into a smooth mixture without any pieces.
When both mixture are mixed properly in the separate mixing bowls you can combine them into one bowl.
Stir both mixtures through each other for example with a spatula. Make sure they are mixed into one smooth batter.
Next cut the peach into small pieces and mix those pieces carefully through the batter.
Put a piece of baking paper in a cake tin and divide the batter over the tin.
Bake the cake for 60 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
Put a skewer in the cake, after baking if it comes out clean the cake is ready.
Let the cake cool down a bit and you can enjoy this delicious and healthy cake.
