Pancakes with coconut

Pancakes with coconut. The pancakes are made with almond flour, cinnamon and coconut. A super tasty and healthy combination!
Pancakes for breakfast, I love it! Nowadays I make them almost every weekend for breakfast. I could never imagine this, because my response when my eyes opened in the morning was FOOD! Now I have to make some effort for breakfast, but the reward is worth the effort. These pancakes are super quick and easy to make. I experimented a bit with flour and ingredients and came to these almond flour pancakes with coconut.

Ingredients

  • 3 eggs
  • 75 grams almond flour
  • 140 milliliters soy milk
  • 12 grams honey
  • 8 grams cinnamon
  • 10 grams grated coconut

Optional (decoration)

  • 10 grams grated coconut
  • Agave syrup or honey​


​How to make it?

Put the eggs in a mixing bowl and whisk airy. You use a fork or whisk to do so, make sure it will become a whole and you don’t see parts of egg left.

​When the eggs are whisked you can continue with the batter. Add the almond flour to the bowl, combined with the soy milk, honey, cinnamon and the grated coconut. If you want to use other plant based milk like for example almond or oat, that is also possible.

​Mix the batter with a fork or spatula. Make sure it becomes a smooth batter. You can optionally mix some extra coconut through the batter if you like that. That will give more coconut flavor to these organic pancakes.

When you have a smooth batter you can bake the pancakes. Don’t make the pancakes too big that will make it really difficult to flip them properly. When the pancakes start to bubble, you can carefully flip them. Bake for approximately 2 minutes per side. Continue until you are out of batter.

You can decorate them with grated coconut and agave syrup, but they taste really good natural as well.
