Pancakes for breakfast, I love it! Nowadays I make them almost every weekend for breakfast. I could never imagine this, because my response when my eyes opened in the morning was FOOD! Now I have to make some effort for breakfast, but the reward is worth the effort. These pancakes are super quick and easy to make. I experimented a bit with flour and ingredients and came to these almond flour pancakes with coconut.

When you have a smooth batter you can bake the pancakes. Don’t make the pancakes too big that will make it really difficult to flip them properly. When the pancakes start to bubble, you can carefully flip them. Bake for approximately 2 minutes per side. Continue until you are out of batter. You can decorate them with grated coconut and agave syrup, but they taste really good natural as well. |
