Pancakes with granola and yogurt


Pancakes with granola and yogurt. The pancakes are lactose free and I chose a plant based yogurt for the topping which makes this recipe lactose free.
I always believe pancakes are a good idea for breakfast or lunch. At the beginning of February Jens and I went to the Health Fair. I loved having a look there and even though I must admit that not everything is ‘healthy’ or true what has been said there, it is a nice experience to be there.
As you can imagine on a Health Fair there is a lot of healthy (and less healthy) food. We had lunch together with some people we knew. On this food spot they had a stand from the Seaweed Burger, but also vegan pie with tea and pancakes. And since I love pancakes (and sweet ones even more than savory) I made a quick choice. Jens actually wanted to try the Seaweed Burger but the queue was so long he decided to have a pancake as well.
These pancakes were made in different ways, traditional with sugar for example. But Jens picked a savory variation with goat cheese which he liked a lot. The pancakes were really delicious also because they were made of spelt flour.  I remember as a kid having stomach pain after eating pancakes, maybe some gluten intolerance? Recently I also noticed a bloated stomach after eating a white sandwich. Sometimes I do believe it is because of the gluten that my stomach is bloated. I want to experiment with eating gluten free for a month for example, but I don’t know where to start. Even though I hardly eat bread, I still think it is difficult. But I will try it soon to see if I notice any difference.
Back to the pancakes I picked a topping with granola, Greek Yogurt and honey. I never thought of it myself, but I liked it a lot.

It also looks super tasty, do you agree? When I wanted to have pancakes for lunch again on a raining Sunday afternoon I though back to this one. It inspired me to make a pancake recipe with yogurt and granola. And I used a plant based coconut yogurt to make the recipe lactose free.


Preparation time: 5 minutes

100% organic ingredients
Ingredients
  • 100 grams spelt flour
  • 2 eggs
  • 50 grams honey
  • 250 milliliters plant based milk

Optional:

  • Plant based yogurt*
  • Granola

* I used coconut yogurt

​How to make it?

First put the spelt flour in a mixing bowl and add the eggs and honey to it. Next add half of the plant based milk and mix. Make sure it becomes a batter. It is a thick batter.

Add the rest of the milk to the batter to make it nice and thin and mix again. Now the batter will be nice and thin to make the pancakes.

It is time to bake the pancakes. Heat a bit of coconut oil (or dairy butter) in a small frying pan. I used one with a 21 cm diamter.

When the oil has melted you can add the batter to the pan. Use half a ladle of batter per pancake. Divide the batter through the pan to make sure the pancakes become equally thick.

After approximately 3 minutes (when the top gets dry) you can carefully flip the pancakes and bake for one more minute on the other side. Continue until you are out of batter.

When the pancakes are ready you can top them with the yogurt and granola. If you don’t like that, they are also very delicious just like that or with a little bit of honey on them. You can now enjoy these delicious healthy, lactose free spelt pancakes.
