Pancakes with chocolate


Pancakes with chocolate, these oatmeal pancakes are not only very healthy, they also fill very well. And of course they are very delicious with the chocolate.
It has been a few months since Jens went away on Sunday to play a soccer match and I felt like having pancakes. I wanted to make my favorite spelt pancakes, but some ingredients were missing and so I made a combination of spelt and oatmeal pancake recipes. Peanut butter and chocolate are my favorites and I decided to mix some peanut butter through and add some pieces of chocolate as well. After that I baked the pancakes and enjoyed them a lot. These pancakes were the best I had ever made. The peanut butter gives such a nice touch to the pancakes, even though I noticed quite soon that I didn’t mix it very well. Some bites were full of peanut butter and some bites I didn’t taste it at all. I send Jens a message that I made the best pancakes ever and wanted to share the recipe with you of course.

But I mixed 2 recipes and didn’t write done what I had done exactly. So I have been trying to figure out the recipe for a long time. But they never were the same as that first time, I felt bad and decided to let it go. Until I tried again after a few months and you can read about the end result today. I did it and they taste just as good as the first time.

Ingredients
  • 2 eggs
  • 2 bananas
  • 50 grams oatmeal
  • 30 grams (pea)nut butter
  • 20 grams dark chocolate

How to make it?

First put the eggs in the blender. Peel the bananas, cut into smaller pieces and add as well. At last add the oatmeal and nut butter to it. You can pick peanut butter instead of nut butter, do make sure you get a natural one without additions.

Blend the ingredients into a batter for approximately 2 minutes. Pour the mixture in a mixing bowl.

Chop the chocolate into smaller pieces and add to the batter. Mix through the batter and make sure it is well divided. Optionally you can set aside some chocolate to decorate the pancakes with.

When you have a big frying pan you can bake 4 pancakes at the same time. Use approximately 1,5 table spoon of batter per pancake and make sure they don’t touch each other. When the pancake starts to bubble and the top gets dry, you can carefully flip them. Bake for another minute on the other side. Continue until you are out of batter.

When the pancakes are ready you can decorate them with some extra chocolate and/or nut butter, like I did. If you don’t want to that is also fine, either way you can enjoy these healthy chocolate pancakes!
