Apple and cinnamon breakfast muffins is something you can easily prepare for a busy morning. These healthy apple muffins with oats are really quick and easy to make.

Breakfast Muffins

I love to have breakfast muffins for breakfast. In the first place because it feels like a party to have breakfast with muffins. And in the second place because it is perfect for when you are in a hurry. If you have some more time in the weekend or in the evening you can already bake them. Than you only have to eat them in the morning. And because of the combination of nutritious ingredients they are not only very healthy, but keep you full for a long time as well.

You can also perfectly eat these muffins on the-go and if you prefer you can also add some yogurt or quark. I wouldn’t recommend eating them on the-go then, that could become a bit messy.

Ingredients

  • 150 grams (gluten free) oatmeal
  • Pinch of baking soda
  • 1 egg
  • 150 grams quark
  • 30 millilitres honey
  • 1 apple
  • 5 grams cinnamon
  • 35 grams walnuts

How to make it?

Preheat the oven on 200 degrees Celsius (392 Fahrenheit). Put the oatmeal in a mixing bowl, add the baking soda, quark and honey to it. Mix the ingredients into a whole.

Peel the apple and cut into smaller pieces. Put in a different bowl and divide the cinnamon on top of it. Mix again.

Next add the apple and cinnamon to the bowl with the oatmeal mixture and mix properly. At last add the walnuts (chop them optionally) and also stir through the mixture. 

Make sure the apple and walnuts are well divided. Grease the muffins molds with some butter or coconut oil and divide the mixture over the molds. You can fill them up because they don’t rise very much. Bake in 25 minutes ready.

 

 

Let them cool down a bit and you can enjoy these delicious apple and cinnamon breakfast muffins. Also very delicious with some yogurt or quark.
