Breakfast waffles with yogurt and blueberries. A healthy, gluten free and nutritional breakfast. You can make the topping to your own liking, but by choosing fruit, yogurt and granola you have a sufficient nutritional breakfast to get you through the day.
Last week on Thursday I visited the Organic Fair in Zwolle, I took a day off from work and went to Zwolle for a 2-hour drive. Of course I had figured out up front where I wanted to have breakfast, because I looked forward to that after this long drive. I went to Lots & More, I will write a blog about it later. But that day it was extremely cold, the real feel temperature was minus 8 degrees Celsius (17 degrees Fahrenheit) and there was snow everywhere which made my shoes wet and my feet even colder. So I went as quick as I could to Lots & More for a warm breakfast. And I managed to do it with these amazing waffles with yogurt, honey, granola and blueberries.
I enjoyed it a lot, my stomach was filled and I was warm again , so I could continue my day. Acutually I also wanted to visit some stores, but it was way too cold to do it, so I decided to drive straight to the fair. It seemed bigger than last year and I had a lot of nice conversations with brands that you will hear about more in the future.
I was very happy that I visited again and had a good time. In the weekend I had time to relax and that was also the moment I though about those waffles. I decided to make something like those waffles and that turned out really well.
Preparation time: 10 minutes Baking time: Approximately 5 minutes per waffle Amount: 4 waffles (2 portions)
No refined sugars added
100% organic ingredients
200 grams buckwheat flour
5 grams baking soda
50 milliliters honey
200 milliliters plant based milk
Coconut oil to grease Topping
(Plant based) yogurt
How to make it?
Preheat the waffle iron.
Put the buckwheat flour in a mixing bowl and add the baking soda, honey, egg and plant based milk to it. Mix, for example with a whisk or spatula into a smooth batter. It will get sticky, but that is normal. If you like sweet waffles you can add some extra honey.
When the waffle iron is warm you can put quite some coconut oil in to grease. This prevents the waffles from sticking to this waffle iron. Divide the batter equally over the iron. Bake for approximately 5 minutes on a medium heat. Pay attention that the waffles don’t burn.
Bake the other 2 waffles and you can make the topping of yogurt, granola and blueberries. Of course you can vary with the topping you like.
