Breakfast Berry Crumble. A healthy breakfast crumble is such a comforting breakfast when the days get colder. This mixed berry and oat breakfast crumble is such a perfect example of that.

Crumble
Crumble is a perfect recipe for leftover fruit. Just like a smoothie or a soup or pasta sauce for leftover vegetables. I try to waste as little as possible, but sometimes my fridge is filled with fruit that is just not that tasty anymore to eat. Crumbles are perfect for that fruit. That is also how I made this crumble. As a kind of experiment with leftover fruit. It turned out to be a perfect experiment because it was super tasty, even without yogurt. You can fully make this recipe complete with some yogurt.
Recipe: Breakfast Berry Crumble


Ingredients
2 apples
100 grams strawberries
30 grams red currants
3 grams cinnamon
35 grams coconut blossom sugar
20 grams almond flour
50 grams (gluten free) oat flour
20 grams coconut oil
25 grams pecans
How to make it?Â
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Peel the apples and cut into cubes. Wash the strawberries, remove the crowns and cut in half. At last wash the red currants and get them of their stalks. Mix properly. Next add the cinnamon and 5 grams (about 1 tea spoon) of coconut blossom sugar and mix again.

Divide the fruit mixture over the bottom of the oven dish and make sure it is well divided.
Melt the coconut oil slowly on low heat fire. Place the almond flour in a mixing bowl and add the oat flour. If you don’t have any oat flour you can also mix oatmeal into flour. Add the melted coconut oil and the rest of the coconut blossom sugar. At last chop the nuts and also mix through the mixture in the bowl.

Crumble the oatmeal/almond flour mixture on to of the fruit in the oven dish.
Make sure all the fruit is well covered. Bake the crumble for about 30 minutes in a preheated oven until brown and crispy. Pay attention that the baking time may differ per oven.
Let cool down because you can easily burn your mouth on the fruit.
This Breakfast Berry Crumble is delicious just to eat plain like this, but to top it of with some yogurt you complete the dish.
