We had a delicious lunch and are ready for the reset of the day! Jens had dropped us and drove to his parents to pick our puppy dog Leyla up, that is at least 30 minutes driving. So we have some time to do other things. Even though the weather is terrible we decide to go to the Marketplace and I can (like I always do on Saturday) buy my fruit and vegetables there. I am lucky because the lemons as well as the blueberries are for sale. Nice for my lemon water and blueberries are favorites of Jens and me.
After buying our fruit and vegetables on the Market my grandmother wants to go the the butcher. So we handle the snow and have all our groceries fixed. Next we went to the store where my mother and aunt work and wait for Jens to pick us up again. In the meantime that my grandmother watches Ice Skating I am having a chat with my aunt. She gives me the idea of making blueberry muffins, great idea!
When I arrived home and warmed up I am starting to search for a muffin recipe and I soon find a basic recipe for natural muffins. Unfortunately an unhealthy variant, but that is ok I will give my own twist to it. I rewrite the recipe to my liking and add the blueberries to it. It is already dark when I can make the recipe. Unfortunately too dark to take good pictures. So one week later I made this recipe again by daylight to be able to share the pictures with you as well.
- 2 Mixing Bowls
- Muffin molds
- Muffins tray
When both the dry and the wet ingredients are mixed properly, you can combine these mixtures in one bowl. All ingredients in this bowl can be mixed with a spatula or fork into a smooth batter. Keep on stirring until you get a smooth batter.
Add the blueberries to it. Mix them carefully through the batter to prevent them from bursting open.
Your batter is now ready and you can fill the muffin mold. When every mold is filled properly you can put a blueberry on top as decoration.
You can bake the muffins for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven. And what is better than the smell of freshly baked muffins?!
I like it a lot if you make one of my recipes and I am very curious to see what you made and how you did it. That is why I like it also if you share it on Facebook or Instagram and tag Organic Happiness @organichappinessblog and/or use the hashtag #organichappiness
