Cookies with chocolate topping. Gluten free healthy snacks are not always easy to find, but these chocolate cookies are a healthy snack. This healthy recipe is really easy to make you only need some patience.

Recept: Koekjes met chocoladelaag

The nuts are not organic, because they are not organically available. All other ingredients in this recipe are organic.
2 eggs
20 milliliters honey
115 grams buckwheat flour
75 grams almond flour
90 grams cashews
75 grams dark chocolate ( 72% cacao)
How to make it?
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Put the coconut oil in a small pan and melt slowly on low heat fire. In the meantime mix the eggs with the honey in a mixing bowl and add the coconut oil when it has melted. Add the flours and mix into a smooth batter. You can also use a mixer to do so.
Grab 35 grams of the cashews and 25 grams of the chocolate. You will need the rest for the topping. Chop the chocolate and nuts as big or small as you prefer and add to the batter. Mix again and make sure the nuts and the chocolate are well divided through the entire batter.
Lay a piece of baking paper on a baking tray and make piles of batter on it with a spoon. The easiest way is to first make the piles (approximately the same size), the batter is quite sticky. Next wet your spoon and mold them in the right shape and thickness with the spoon. When the batter sticks onto the spoon again you can wet it again and continue. Bake the cookies for 20 minutes in a preheated oven.
In the meantime you can crush the nuts. I used the coffee grinder that came with my food processor. You can also use a food process if you don’t have a grinder. Put the nuts in the grinder/food processor and grind until only crumb is left.
Let the cookies cool down. Grab 2 pans and put some water in the biggest pan, put on low heat fire. Put the smaller pan inside the big pan and put the chocolate inside the small pan. The chocolate will melt au bain marie because of the heat of the lower pan. It is important that you do this on low heat fire and the water does not boil.
When the chocolate has melted you can cover the half of the cookies with chocolate. I used a butter tassel to do so, but you can also take them through the chocolate and cover them like that.
When the cookie is covered with chocolate you immediately get it through the nut crumb. The chocolate is still wet so the nut crumb will stick easily on it. Lay a piece of baking paper on a plate and lay the cookie on it. Otherwise it will stick on to the plate. Continue doing all cookies like this and lay them in the fridge to harden.
You can now enjoy these delicious and healthy cookies, perfect as a healthy snack for your kids or to take to your job.
