Cookies with chocolate, another recipe from Voedingsgeluk. Since a few weeks I try a new recipe from Voedingsgeluk. I wrote about it last week already. I already made a smoothie, a banana bread and lat week I tried the pancakes with banana flour. This week it is time for chocolate cookies!

This week the recipe again contains an ingredient that I don’t know, which is tigernut flour. I only know the tigernuts from the supermarket. I am searching online and find that Holland and Barret sells this tingernut flour. Their website says the following about it: “Holland and Barret tigernut flour is made of 100% organic tigernuts (chufas) and is also known as chufa flour or yellow nutsedge. It contains a lot of healthy fats and proteins. The tigernut is not even a nut but a root, this flour is a perfect replacement for almond flour for example.
Tigernuts are naturally sweet, which makes tigernut flour ultimately useful for sweet baking recipes.”
So we learned something more about tigernutflour. Let’s see the recipe we need it for.
Preparation time: 15 minutes (+ 15 minutes waiting)
Baking time: 15 minutes
Amount: 8 koekjes
- Baking paper
- Baking tray
- 2 pans
- Optional: butter tassel
- 100 grams dates
- 2 eggs
- 100 grams tigernut flour
- 5 grams baking soda
- 1 vanilla bean
- 50 grams dairy butter
- 50 grams dark chocolate
How to make it?
Preheat the oven on 175 degrees Celsius (347 Fahrenheit). Put the eggs and dates in the blender and add some hot water. Blend into a smooth mixture. Put this mixture in a mixing bowl and add the tigernut flour to it. mix them into a batter with a spoon.
Melt the butter in a small pan on low heat fire and once it is melted add to the mixing bowl.
Mix through the batter and add the baking soda. Cut the vanilla bean in half and add the core of the bean to the bowl as well.
The batter is ready, put in the fridge to harden a bit. In the meantime cput a piece of baking paper on a baking tray and after 15 minutes make the cookies. Make them approximately 1 centimer in height. Bake them for 15 minutes in a preheated oven. Let them cool down while you melt the chocolate.
Grab a bigger pan and fill half with water on low heat fire. Put a small pan inside it and put the chocolate in it. The chocolate will melt slowly because of the heat.
When the chocolate has melted, cover the cookies with it. I used a butter tassel which works perfect. Put them in the fridge to harden the chocolate a bit.
After a while in the fridge the chocolate has harden and you can enjoy these delicious and healthy cookies!
