Breakfast Pancakes are always a good idea if you ask me. But these healthy breakfast pancakes are so festive that should not be missing at the Christmas breakfast table. And they are also completely in the Christmas colors.
I like to start Christmas of healthy and that is easily done with these pancakes. The spirulina is detoxing, which is perfect when you have a hangover at the Breakfast table. It also improves your immune system, because nobody likes to have a cold at Christmas. And last but not least it gives this beautiful green color to these pancakes. Enough reasons to make them this Christmas.
25 grams (gluten free) oatmeal
1/2 tea spoon spirulina
60 grams (frozen) cranberries
15 grams honey
Optional grated coconut topping
Coconut oil for baking
How to make it?
Put the eggs, bananas, oatmeal and spirulina in the food processor. Mix into a smooth batter. Heat some coconut oil in a frying pan. In a big pan you can bake 3 pancakes at the same time. Use two table spoons of batter per pancake.
Next add the cranberries to a sauce pan and add some honey. Mix and make sure it doesn’t stick to the pan. After about 5 minutes you have a nice compote.
After about 4 minutes you can flip the pancakes. You can see them getting firm and the edges brown. Bake for another minute on the other side.
Place the pancakes on a festive plate and divide the compote on top. You can now enjoy these Christmas Pancakes.
