Breakfast pancakes are always a good idea if you ask me. But these healthy breakfast pancakes look so festive that they can’t be missed during the Christmas breakfast. And they are also completely in the Christmas colors.
I look to start off Christmas healthy and that is really easy with these pancakes. The spirulina is detoxifying, perfect when you arrive with a hangover at the Christmas table. It also improves your immune system, which if perfect because nobody wants to have a cold at Christmas. And last but not least it gives these pancakes their beautiful green color. Enough reasons to make them this Christmas.
Recipe: Christmas Pancakes
- 2 eggs
- 2 bananas
- 25 grams (gluten free) oatmeal
- 1/2 tea spoon spirulina
- 60 grams (frozen) cranberries
- 15 grams honey
- Optional grated coconut as topping
- Coconut oil to bake
How to make it?
Put the eggs in the food processor and add the bananas, oatmeal and spirulina. Mix into a smooth and green batter. Heat some coconut oil in a frying pan. In a big pan you can bake 3 pancakes at the same time. Use 2 table spoons of batter per pancake.
Next put the cranberries in a sauce pan with some honey. Stir and make sure it doesn’t stick to the pan and becomes a nice compote. This takes about 5 minutes.
After about 4 minutes you can flip the pancakes. You can see when they become firm and the edges brown. Bake for about one minute on the other side.
Place the pancakes on a festive plate and divide the compote on top. You can now enjoy these delicious Christmas Pancakes!
