Oatmeal pancakes with fruit. This variation of the banana pancakes is super healthy and really easy to make as well.
Unfortunately it looks like the autumn has really begun. For me Spring and Summer are my favorite seasons, blue skies, the sun and going outside without a jacket. That is what makes me happy. Nowadays when you wake up it is still dark outside and that does make it a bit more difficult to get out of bed. This is also a time when you will easily pick up a cold or flu, even when you are eating healthy.
Jens went to the Ardennes and I ate extra healthy. Maybe not really on purpose, but sill. I don’t like to cook for myself and so I made an easy pasta and a tomato soup with a lot of vegetables, everything in the blender and done. Unfortunately Jens came home with a cold. I made smoothies and orange juice and hoped to not get it. You do feel a cold coming and I drank tea with fresh ginger and honey all day long for a few days and I must admit I didn’t get the cold this time. This proved to me again that a healthy lifestyle can definitely help to prevent a cold or flu, even if you see it coming already. Because I was not ready to say goodbye to Summer just yet, I made these pancakes with strawberries.
Preparation time: 3 minutes Baking time: Approximately 2 minutes per pancake Amount: 9 small pancakes

Ingredients
2 bananas
2 eggs
50 milliliters plant based milk
50 grams oatmeal*
3 grams cinnamon
Optional (decoration):
Quark
Fresh fruit
*By choosing gluten free oatmeal you can make this recipe gluten free.
How to make it?
Peel the bananas and put them in the blender. Next add the eggs, plant based milk, oatmeal and cinnamon to it.
Blend the ingredients for approximately 2 minutes until you have a firm batter. You can slowly pour the batter from the blender into the pan, you will get small pancakes if you do. You can also use a ladle if you prefer.
Bake the pancakes for approximately 2 minutes per side. When they start to bubble or when the top gets dry, you can carefully flip them. Bake for another 2 minutes on the other side. Continue baking until you are out of batter.
When the pancakes are finished, you can decorate them. I used strawberries and quark to do so. You can also use a (plant based) yogurt or different fruit. And without any topping these organic pancakes are also super tasty!
