Tart for Breakfast
Breakfast is the first moment of the day on which you can eat again after a night of sleep. And for met that is a little party every day. I really love to eat ad so breakfast for me is my favorite eating moment of the day. A while ago I saw a quote that ‘sleep is a time machine to breakfast’ and I see it like that sometimes as well.
And if we make a Breakfast party a tart can not be missed. I try to make a party of my breakfast everyday. By adding as many ingredients that I like and that fill as well, I am filled en won’t be snacking during the day.
Nutritious
This breakfast tart is made of oatmeal which contains ‘slow’ carbohydrates that slowly release energy to your body. That makes that you are full for a long time, also the fats (in the almonds) ad the proteins (in the almonds and yogurt) are present. And that makes this tart into a complete meal, definitely in combination with the vitamins from the fruit.
Recipe: Breakfast Fruit Tart with Granola Crust


Ingredients
60 grams coconut oil
50 millilitres honey
50 grams unsalted almonds
150 grams (gluten free) oatmeal
50 grams grated coconut
1 egg
500 millilitres (Greek) yogurt
1/2 mango
figs
2 bunches of red berries
How to make it?
Preheat the oven on 175 degrees Celsius (347 Fahrenheit). Drop the coconut oil in a small pan combined with the honey and melt slowly on low heat fire.Â

In the meantime you chop the almonds. Pour the oatmeal in a mixing bowl combined with the coconut, almonds and 1 egg. At last add the coconut oil mixture.
Mix the ingredients into a sticky whole.

Grease the quiche mold. It is easy to use one with a removable bottom because that makes it easy to remove the tart later.
Divide the granola mixture over the mold and make sure it has the same thickness everywhere. Also make sure you have an upright edge. Bake the tart in 20 minutes gold brown and done.
Let cool down for about 30 minutes.
When the tart has cooled down you can divide the yogurt over it. Cut the fruit and also divide over the tart. Cut the tart in pieces and enjoy.
