Granola breakfast tarts with mango

Granola breakfast tarts with mango. These gluten free tarts with Greek Yogurt and fresh fruit are not only healthy and delicious, but also very easy to adapt to your own wishes.

Sometimes I can vary a lot with my breakfast and I don’t eat the same breakfast for one day in a week. Other weeks I almost every day have the same breakfast because I don’t have any inspiration to vary. If you recognize this, I have good news for you, because I have developed a delicious breakfast recipe for you. It is even a bit of a Summery breakfast with all the fresh fruit. I ate them last week in the sun in the garden and got the spring vibes.

Besides that you can also make them the night before, that way you only have to finish them in the morning. You can also easily adapt the recipe to your own wishes. You can for example pick plant based yogurt or pick different kinds of fruit. That way you can make it completely to your own liking. 


Preparation time: 10 minutes

Baking time:            15 minutes

Ingredients

  • 45 grams dairy butter
  • 75 grams unsalted cashews
  • 115 grams gluten free oatmeal
  • 5 grams cinnamon
  • 1 egg
  • 25 milliliters honey

Topping

  • Greek Yogurt
  • Fresh fruit

How to make it?

Preheat the oven on 180 degrees Celsius (372 Fahrenheit). Melt the butter slowly on low heat fire and make sure it does not boil.

In the meantime chop the cashews that makes it easier to mix with the oatmeal later for the bottom of the tarts. You can also use other nuts if you like them better than cashews.

Put the nuts in a mixing bowl and add the cinnamon and oatmeal to it. Mix to make sure the flavors are mixed properly.

Next also add the egg, melted butter and the honey. Mix again (for example with a spatula or a spoon)  into a sticky mixture. 

Grease the mold with some coconut oil or butter. Put a big table spoon of the oatmeal mixture in every mold and divide properly. Make sure there are some edges and a flat bottom to be able to cover it properly later. Also pay attention that there are no holes.

Bake the tarts for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven.

Let the tarts cool down for at least 30 minutes before covering them. I used Greek Yogurt, mango and blueberries. You can also pick different fruit or other yogurt/quark if you prefer. Enjoy!
