Granola cups with fruit. This super easy breakfast recipe is very healthy, fills good and is super tasty!
Last weekend was a busy baking weekend. Actually I wanted to do a lot of other things, but baking is just so much fun! So I tried some new recipes.One day I was home alone with our dog Leyla. I love those days, I can cuddle with her all day and make long walks together. She loves walking, playing and running. She has just turned one year old and it is so much fun to see her developing. She is listening better and better. If we go to the dyke and she can run she definitely will. But if she sees another dog, she first looks at me before she goes (to ask if she is allowed to go) and that gives us quite some rest. Only a few months ago we didn’t know what to do. She was in her puberty and didn’t listen at all, like real adolescents. And that is quite difficult when she is free outside. That is also why I am very happy that she is growing bigger and listens to us. We also noticed that this week when she was home alone for 6 hours, for the first time. We practiced being alone and it went better and better, but 6 hours is quite long. Luckily we always record it so we know exactly what she is doing and it went super well! We are so proud of her. The only difficulty she has at the moment is listening when there is food involved.

I had a nose in my picture all the time, but she didn’t get anything and chose to give up. Today we are again home alone and we will be heading to the beach. Running together and playing, I am excited! And this weekend the weather will be perfect again, this might be the last Summery weekend so we will definitely enjoy it with the three of us. And this Summery breakfast fits perfectly with it of course. The big advantage is that the recipe is very easy to make!

How to make it?
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Peel the banana, put in a bowl and mash with a fork.
Mashing the banana goes easier if you use ripe bananas. When you have mashed the bananas you can add the oatmeal, honey and cinnamon to the bowl. Mix the ingredients properly until it has become a granola mixture. The mixture smells super good because of the combination of cinnamon and banana.
Grease the muffin tin. Put a table spoon of the mixture in one of the molds and press with the spoon. Make sure you have a nice edge and the bottom is not too thin.
Bake the cups for 30 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
Afterwards let the cups cool down for approximately one hour. Otherwise the yogurt will get warm. When the cups are cooled down you can cover them with whatever you like. I used Greek Yogurt and strawberries.
After an hour you can enjoy these delicious breakfast cups. Of course you can also make them the nigh before. They are also perfect to freeze.
