Granola with chocolate, these puffed spelt granola contains super healthy ingredients and it really crunchy as well. Perfect for busy mornings.

You might already now that we have our first week of Holiday. The first 3 weeks of June are actually my regular Holiday period. And because we wanted to finally fix our garden, we decided to not go on Holiday this year, but stay at home.

I wanted to relax, rest and make a lot of new recipes. But until now I haven’t spend one minute in the kitchen to make a new recipe. We are busier at the moment than when we are working. Monday Jens started with the garden and I started on the kitchen cabinets. And that continued throughout the week. Every day I cleaned another cabinet in the house, I emptied it, took photos of the things I wanted to sell, clean the cabinet and reorganized it. Jens is still working on the garden and at the moment usually at the garden shed. He is doing a lot of different things in it, made his own work bench and changed our garden shed into a work place. So nice that we finally have the time to organize everything and see it getting better.


And of course Leyla also gets enough attention. Yesterday we started the day with a nice walk on the beach and the day before we made a walk through the woods. I love being in nature early in the morning and enjoy the time with the three of us during these weeks.

Last week I decided to make muesli bars to take with me to work. I was at the supermarket and saw puffed spelt and though that would be perfect to make the bars. I everything according to my good recipe, pressed the muesli bars into the mold, but when I got it out of the mold they fell apart and weren’t firm enough to become muesli bars. But when I saw that mixture laying down, I saw that I had made a delicious granola. This shows that when something fails it can still lead to something beautiful and it did because this granola was really delicious!

Preparation time: 15 minutes

Baking time:            15 minutes

Amount:                     1 jar of granola

Special Products:

  • Food processor
  • Mixing bowl
  • Saucepan
  • Baking paper
  • Baking tray
  • Airtight Jar



  • 200 grams puffed spelt
  • 75 grams unsalted nuts
  • 10 grams raw cacao powder
  • 40 grams sunflower seeds
  • 30 gram chia seed
  • 75 grams dates
  • 35 milliliters water
  • 100 milliliters honey
  • 35 grams coconut oil
  • 40 grams dark chocolate 

How to make it?

Preheat the oven on 200 degrees Celsius (372 Fahrenheit). Put the puffed spelt in a mixing bowl. Chop the nuts as small as you like and add. Also add the cacao powder, sunflower seeds and the chia seed and mix properly.

Crunch the dates in the food processor and add to the mixing bowl.

Put the honey in the saucepan together with the water and the coconut oil and put on low heat fire. Make sure they honey becomes completely liquid, it can take a while.

When these ingredients are completely liquid you can carefully add the spelt mixture to it. Mix both mixtures properly into a sticky whole.

Hak de chocolade zo fijn als je zelf lekker vindt en voeg die tot slot toe aan het mengsel. Roer er goed doorheen en zorg ervoor dat het mooi verdeeld zit.

Leg een bakpapiertje op een bakplaat en verdeel het mengsel hierover. Bak in ongeveer 20 minuten goudbruin en gaar.

Laat even afkoelen en je kunt genieten van deze heerlijke chocolade granola.
