Last year Jens and I had our first Christmas in our own home, just the two of us. Or well Christmas evening. The other days we were at our families, which is also very nice of course. But Christmas evening was our own Christmas moment, we cooked together and enjoyed this lamb rack from the butcher. But if you know me a bit already you also know that I like breakfasts even more than dinner. So for the Christmas breakfast I also did a lot. I got up early while Jens was still sleeping and baked fresh sandwiches, a stollen an other delicious things. So much that you are already full at the beginning of the day, but super delicious.
Having breakfast together is really one of my favorite moments of the day and we don’t do that very often. And the Holidays are a perfect moment to do so. That is also why I will be sharing some delicious breakfast recipes with you that you can put on your Christmas breakfast table. Like the croissants that are very easy to make as well.
Baking time: 30 minutes

How to make it?
Preheat the oven on 200 degrees Celsius (392 Fahrenheit). The best is to pick organic puff pastry without additions. The best is of course to make the puff pastry yourself, but after 3 failed tries I have postponed that for now. I picked cheese because I will be making half of the croissants with cheese. You can also pick sausage, cream cheese or something else as a filling. Or you can leave the croissants natural of course.
Cover a cutting board or the counter top with some flour. Lay 2 pieces of puff pastry on top of each other and push firmly. Roll with the rolling pin into a rectangular dough. If you are satisfied with the proportions you can cut the dough diagonal.
For natural croissants you can roll them. If you want to fill them, put the filling on the widest part and roll the croissants.
To make sure they are closed, you can make the edge with which they close a bit wet with some water. If you push a bit they will remain closed. You can also cover them with some whisked egg to give them a nice brown color. When the croissants are ready you can lay them on the baking paper on a baking tray.
Bake them for approximately 30 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
