Chocolate sandwiches, these lactose free chocolate sandwiches are not only healthy, they also taste really good and they are very filling as well.
I can say that I am a chocolate monster. When I was a kid and went on holiday with my parents to France and got to pick breakfast, I always had the ‘pain au chocolat’ chocolate sandwiches. And I loved the greasy ones with pieces of chocolate who were also covered with chocolate paste on the inside. When Jens and I didn’t live together yet, I usually spend the weekends with him at his parents place. In the morning we went to the supermarket, which I believe was a camping store in such a small village. We bought croissants, chocolate sandwiches and fresh orange juice and it always gave me a holiday-feeling.
I must admit that is has been a while since I have eaten those chocolate sandwiches, but I did make my own variant. Not comparable to the one from the supermarket at all, but still very tasty. And actually this recipe happened accidentely, which happens to good inventions more often haha. I wanted to make chocolate cookies with nuts and used approximately the amounts in this recipes, the cookies turned out to become sandwiches. They were very taste, just not really cookies.
I changed the recipe a bit and these chocolate sandwiches were born and I love them a lot.

How to make it? Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Put the coconut oil in a small pan on low heat fire to melt. Make sure it does not boil, when it has melted you can set aside the pan. In the meantime mix the spelt flour, eggs and baking soda in a mixing bowl. You can also add the melted coconut oil. Mix (for example with a spatula) into a smooth whole. |
Let them cool down and you can enjoy these delicious organic chocolate sandwiches.
