Cashew Cookies with Chocolate, these gluten free, organic cookies are made with tigernut flour which makes them a super healthy snack.
The people who have already subscribed to my news letter read last Monday about the chocolate muffins that were supposed to be online today. I even added a picture of these delicious muffins. But sometimes I am a bit chaotic and lost the recipe and missed quite some pictures as well. So I had to make new muffins. I tried it yesterday and this afternoon, but they didn’t become the same. These ones fell apart and couldn’t be placed online.
Luckily I had made these delicious cookies last week and that recipe was very good. So I made them again this afternoon to be able to take pictures and share this recipe with you. Oh and I now also have a notebook in which I write down all recipes so nothing can get lost. And of course I will share the chocolate muffin recipe when I found it (out) again.
Quickly over to the recipe of this week. Cashew Cookies with Chocolate made with tigernut flour. Do you also (like me) thought about those tiger nuts. That is what I thought about and how I used to love them. Nowadays I know how much garbage is in them and I don’t eat them since. But this flour is not made of those tiger nuts. The tigernuts (chufa) is a tuber that contains a lot of healthy proteins and fats. Because the chufa is naturally sweet this flour is particularly suitable for sweet baking recipes like these cookies. You can buy this flour at Holland & Barrett (no spon).
50 grams dark chocolate** I used a vegan chocolate that is also lactose free
How to make it?
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Put the coconut oil in a small pan and melt on low heat fire. In the meantime put the tigernut flour in the mixing bowl, together with the eggs, agave syrup and peanut butter. Mix properly and add the coconut oil when it has melted and mix as well. Did you know that tigernut flour is super healthy? It contains a lot of minerals, vitamins and fibers. A perfect basis for these healthy cookies.
When you have mixed all ingredients properly, your dough is almost ready. Chop the chocolate and the cashews as small as you like. You can leave them quite big like I did and chop them with a knife, that gives a bite in the cookies. If you want the chocolate and nuts really small you can also use a food processor, or leave them as a whole if you prefer.
When the chocolate and nuts are as small as you like, you can add them to the dough. Mix carefully through and make sure they are well divided through the entire dough. The cashews give such a nice flavor to these cookies. And chocolate always has the perfect flavor if you ask me.
Cover a baking tray with a piece of baking paper and make small piles of dough on it. Push them a bit to make sure they don’t get too high. It will than be difficult to get them done everywhere. If you make them too flat they will burn easily. You can make approximately 12-14 cookies with this amount of dough.
Bake the cookies for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven. Have fun baking and enjoy eating these healthy, organic cookies!
