​Cake with apple. This partial spelt cake is really easy to make and the perfect healthy snack.
Who doesn’t like a good apple pie? The only disadvantage of making it is that it takes quite some time to cut the apples and peel them as well. I believe in general that it takes way too much time to make an apple pie, even though I do love it so much. I just recently shared an apple pie recipe did you try it already?
Like I mentioned baking an apple pie takes time. Time is precious and I don’t have enough time to bake an apple pie every weekend. This weekend my parents will come over and I do want to have something with the cup of coffee. The weekend was quite busy so I didn’t have time to bake an apple pie. ​
I admit I made this picture last Summer and it is already March, but I liked too much not to use it. Like I said my parents came over for a cup of coffee and I was looking for something to eat with it.
Suddenly I though, why not make a cake with apple and walnuts, like I did with the apple pie. That is what I did. I combined some ingredients and started with this apple cake with walnuts.
Preheat the oven on 180 degrees Celsius (372 Fahrenheit). Put the coconut oil in a small pan and melt on low heat fire. In the meantime put the eggs in a mixing bowl and whisk airy with a whisk
When the coconut oil has melted you can add it to the bowl. Make sure there are no pieces of egg left, but everything is mixed properly.
Put the almond flour in a different bowl combined with the spelt flour, baking powder, honey and cinnamon. Mix properly and make sure it becomes a whole. When all ingredients are mixed properly you can add the ingredients from the other bowl to it.
Mix the ingredients with a mixer into a smooth batter. Start on a low setting and slowly turn up the volume of the mixture when it has become a whole already. That way you will also mix all the clumps out of the batter.
When the batter is smooth, you can start with the apple. Peel the apple, remove the core. Cut the apple into smaller pieces and add to the batter.
You can chop the walnuts or leave them as a whole. Also add the walnuts to the bowl with the batter for the cake.
Mix the apple and walnuts through the batter to make sure they are well divided through the batter. Put a piece of baking paper in a cake tin and divide the mixture over it. Bake the cake for 45 minuets in a preheated oven. Pay attention that the baking time may differ per oven.
You can now enjoy a piece of this easy, delicious and organic apple cake!
