Cacao Banana Pancakes

Cacao Banana Pancakes. Yes you are reading this correctly pancakes and cacao, two of my favorites combined in one healthy breakfast. 
 
I love healthy and delicious breakfasts. I can even look forward to my breakfast when I am in my bed the night before. It doesn’t matter if I am having crackers with cheese or a more extended breakfast. I just love it a nice cup of green tea with it and I am ready for the day.

In the weekends I have more time to make an extended breakfast or try a new recipe. That is also what I did on this Sunday morning. I had made banana pancakes before with and I had always liked them. The advantage is that they are super easy to make, but the result is delicious.

That is why I was thinking to make a variation on the basic recipe. I liked adding cacao to the batter to make some chocolate pancakes. This was a really good choice, they are super delicious!

Ingredients:
2 bananas
2 eggs

7 grams cacao

 

Optionally:
Grated coconut (decoration)

 

 
 
How to make it?
 
Peel the bananas and put them in a bowl. Mash the bananas with a fork. Make sure they are mashed properly. Pay attention that you pick ripe bananas. If they are not ripe it will be difficult to mash them properly. 
 
 
 
 
 
 
When the bananas are mashed properly, you can add the eggs to it. Mix the eggs with a fork through the bananas. Make sure you don’t see any pieces of eg anymore. The batter will never get completely smooth because of the pieces of banana in it. They also give a nice flavor to it, so that is not a problem. 
 
 
 
 
When you have a nice batter you can add the cacao to it. Mix the cacao slowly with a fork through the batter and make sure all cacao is included in the batter. That way you make sure all pancakes have the same cacao flavor. 
 
Make sure the pan is very warm before you put the batter in it. Don’t make the pancakes to big, than it will become very difficult to flip them. 
 

 

Bake the pancakes on medium heat fire on one side. When the top starts bubbling and the edges come up a bit you can flip the pancakes. Bake for another minute on the other side. Continue until you are out of batter. 
 
 
 
 
You can decorate the pancakes with grated coconut for example like I did.But they are also very delicious when they are natural.
