Cacao bliss balls with coconut

Cacao bliss balls with coconut, a healthy gluten free and vegan snack for a tasty energy boost!
A while ago I had a baking weekend and made a lot of recipes. Funny how I sometimes don’t bake for days or weeks and sometimes make 5 new recipes in one weekend, for me it is all about flow. When I am in the baking flow, it almost goes effortless and I get one recipe out after another.
I thought it was time for some nice snacks and I had to be quick with these cacao balls. I wanted to let them harden in the fridge and it was too dark to take a picture. Jens kept on eating them and the next morning I still had to take the pictures. Luckily he stopped on time and I had enough balls left for the picture. These balls are also very easy to take with you to the office or school and you have a delicious snack. You can also vary with this recipe for example by adding peanut butter, that way you make them even more tasty!
Preparation time: 10 minutes + 15 minutes waiting time
Amount: Depending on the size approximately 30 balls

Ingredients
- 200 grams dates
- 60 grams coconut oil
- 170 grams unsalted nuts
- 10 grams raw cacao
- 15 grams chia seed
- Grated coconut

How to make it?
Put the dates in a bowl of water and let them well for 15 minutes.
In the meantime melt the coconut oil slowly on low heat fire in a small pan.

In the meantime put the nuts, cacao and chia seed in the food processor. When the dates are ready you can add those as well combined with the melted coconut oil.
Mix these ingredients for a few minutes into a sticky mixture.

Roll small balls of this mixture with your hands. You can make them as big as you like.
Lay the balls on a plate. When you have made all the balls you can put the grated coconut in a small bowl. Roll the balls through it and make sure they are fully covered with the coconut.
Lay the balls in the fridge for approximately an hour to harden. It is best to keep them in the fridge as well.
