Cinnamon sandwiches with raisins. This is a perfect Christmas recipe, easy to make, healthy and super delicious as well.
Having breakfast together is something I like a lot, which you may already know. We try to have breakfast on a Sunday morning together. I usually bake pancakes and we enjoy a relaxed breakfast together. Christmas is also a moment to enjoy that time together with a nice breakfast.
Last year was our first Christmas in our own home. I woke up extra early to bake all kinds of things. Eventually it took me a while, but we enjoyed it a lot! This weekend I also made a lovely recipe that is perfect to put on your Christmas breakfast table. The advantage of this recipe is that it is easy to make and you only need some patience for the rising and baking. So you can also make them upfront the night before for example, that way you only have to eat them in the morning.

Ingredients

  • 165 grams rye flour
  • 4 grams yeast
  • 7 grams cinnamon
  • 25 grams coconut oil
  • 1/2 banana
  • 85 milliliters plant based milk
  • 100 grams raisins

Optional

  • 20 grams agave syrup

How to make it?

Put the rye flour in a mixing bowl with the yeast and 3 grams of the cinnamon, mix properly.

When the ingredients are mixed properly, melt toe coconut oil slowly on low heat fire in a pan. Make sure it does not boil.

​Mash the banana in another mixing bowl. When the banana is mashed you can add the melted coconut oil and plant based milk to it. Optionally you can add some agave syrup as well. I must admit that I forgot to add it, but also love the flavor without it. If you like the sandwiches a bit more sweet add the agave syrup. Mix the ingredients properly.

When these wet ingredients are also mixed, you can add them to the first bowl with the dry ingredients. Mix these two together and make a ball of the dough with your hands. When you have a firm ball you can knead the raisins through it with your hands.

Add the rest of the cinnamon and also knead through the dough to make sure it is well divided.

Put the dough ball in the bowl and put a clean, moist towel on top of it. Store the bowl in a warm place for 30 minutes to let it rise.

I set the bowl next to the heater which went really well.

After 15 minutes you can already preheat the oven on 180 degrees Celsius (356 Fahrenheit).

When the dough has risen, you can make sandwiches of it. You can make the sandwiches as big as you like. For breakfast I prefer smaller sandwiches, that is why I made 6 small sandwiches.

Bake the sandwiches for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven.

Let the sandwiches cool down and you can enjoy these nice, smooth sandwiches.
