Omelette with zucchini


Omelette with zucchini, this heavy breakfast will definitely help you with your hangover and otherwise it is also a lovely lunch dish.
It is 1 January 2018 and it still sounds a bit weird. First I want to wish you a very happy, healthy, loving and inspiring new year. That you will be able to do what makes you happy and you don’t change your mind by what others say. That will be my goal as well!  Today (after all the mandatory visits) I will make a list of my goals for 2018! Personally but also for my blog. Last year I got the chance to do a lot of fun things and grow, but I hope 2018 will bring me even more nice things in that area.

I can imagine you are feeling like this today and that you have a hangover. That is why I made this anti-hangover recipe for you to help you get through the day and your hangover. And it is really easy to make, because you don’t want to make anything difficult today!

Ingredients

  • 100 grams zucchini
  • 75 grams cherry tomatoes
  • 50 gram chestnut mushrooms
  • 2 eggs
  • 20 milliliters (plant based) milk

Topping

  • Herbs ( I used thyme)
  • Cheese ( I used hard goat cheese)
  • Bacon/Ham

​How to make it?

Peel the zucchini and cut into cubes. Also cut the cherry tomatoes into smaller pieces. Cut the ends of the mushrooms and cut them into smaller pieces. You don’t peel the tomatoes and mushrooms so it is the most healthy to chose an organic variant.

Beat the eggs in a small bowl with a fork. Add the milk to it and mix it very properly into a smooth mixture. You can also use a plant based milk for this recipe.

Pour the egg mixture over the vegetables in the pan and make sure it is well divided through the entire pan.

When you want to add cheese, herbs or something else this is the moment. Cover the omelette with herbs, cheese and/or other ingredients that you want to use. I sued thyme and goat cheese and covered the omelette with it.

Let the omelette stand for approximately 10 minutes on low heat fire with a lit on it.
