Buckwheat pancakes with cinnamon. A pancake recipe for a gluten free and lactose free breakfast recipe. These healthy pancakes with cinnamon are really easy to make and what is better than fresh baked healthy pancakes for breakfast?!
One day later than I had planned, but I didn’t feel the complete inspiration to write this blog and I did feel that for other things, so I focused on those things this week. As you could have read in my previous blog, I am addicted to the So V’s podcast. Every free moment that I have the podcast is on and it just gives me so much energy, inspiration and motivation. That is really bizarre. I used to need 8 hours of sleep every night to not feel tired the next day and at 9.30/10.00 at night I was super tired. This week I had worked until 12 a few days and I was not tired the next day even though my alarm was at 5.45. I even set my alarm at 6.00 in the weekends to be working on everything, I noticed not having a lot of energy when I slept longer in the weekend than when I got up early.
Also really cool to notice things happening suddenly now I get into the action mode. Last Saturday night I suddenly felt an urge to start with an E-book, so I did it and the inspiration came all by itself. I had thought of the idea in Spain already and wrote some recipes, but now I felt the urge to really start. Super cool, so I think that it will get out in September and it will only contain gluten free and lactose free recipes.
Something else that is really awesome is that I am having my first paid cooperation. I can’t say a lot about it, except that is going to be really cool. I like it so much that I will have my first paid assignment. Not to get rich or earn money with, but because I can use it to inspire even more people to eat healthy and organic.
Super cool what is coming on my path and it can only get better and more. So last week my focus was on these two aspects more than on this blog. But filled with inspiration I am writing it for you today.
Preparation time: 5 minutes
Baking time: approximately 4 minutes per pancake Amount: 8 pancakes
Frying Pan (diameter 21 cm)
No refined sugars added
100% organic ingredients
100 grams buckwheat flour
250 milliliters almond milk*
50 grams honey
5 grams cinnamon
*To make this recipe nut free you can replace the almond milk by another plant based milk.
How to make it?
Put the flour with half of the almond milk in a mixing bowl. Add the eggs, honey and cinnamon to it. Mix very well with a spatula. You can also do this in the mixer if you prefer, like I did.
If you have a nice smooth batter it is a bit thick. You can add the rest of the almond milk and mix again. Now you have a thin batter to bake the pancakes.
Heat some coconut oil or butter in a Frying Pan. Add approximately 3/4 ladle of batter to the pan and divide. With this amount you will get thin pancakes, if you prefer you pancakes a bit thicker you can add some more batter. Bake on one side until the edges turn brown and carefully flip it. Bake for another minute on the other side. Continue doing this until you are out of batter.
You can now enjoy these deliciously healthy pancakes, perfect if you want to surprise somebody with a breakfast. Lovely with some extra cinnamon on it. I always put some plantbased yogurt and some fresh granola on them, lovely!
