Blueberry muffins with apple

Blueberry muffins with apple, a very nice combination. The apple gives a fresh flavor to the muffins.

​This week is the last week already of the cooperation. Look on the blog for the recipes that I have made in the past weeks. This week again a surprising combination on the menu. Blueberry muffins with apple.

Preparation Time: 15 minutes
Baking time:              25 minutes
Amount:                       6 muffins
Special Products:

  • Muffin Tray
  • Grater
  • Sieve
  • 2 mixing bowls


  • 30 grams unsalted dairy butter
  • 2 small apples
  • 2 eggs
  • 20 grams honey
  • 35 grams almond flour
  • 40 grams grated coconut
  • 5 grams baking powder
  • 100 grams blaueberries

How to make it
Preheat the oven on 180 degrees Celsius (356 Fahrenheit) and melt the butter on low heat fire in a small pan. When the butter has melted set aside the pan.

In the meantime peel the apples and grate them. I did this on top of a sieve, because afterwards you need to push the moist out with a spoon. So that is what you can do after grating the apple.

​Put the eggs in a bowl, add the melted butter to it and mix properly.

When you have mixed the ingredients properly you can add the honey and apple and mix through this mixture. In another bowl you can mix the almond flour with the grated coconut and the baking powder.

When the dry ingredients are mixed properly you can add them to the bowl with the egg mixture.

Mix both mixture properly into a nice dough. When it has become a whole you can add the blueberries and mix them carefully through without breaking. You can fill the muffin molds and make approximately 6 muffins with this amount of dough.

Bake the muffins for 25 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
