Blueberry Cheese Cake, a gluten free cake with fruit. This cheese cake is really easy to make and a more healthy option so you can always have an extra piece.
Cheese Cake is something that I have been postponing to make for a while. I did make a Cheese Cake last year that was quite well, but somehow I didn’t dare to try another one. Mostly because I was scared it wouldn’t get hard, but I must admit this Cheese Cake is really perfect, the flavor is really good and it fills very good as well. At the moment I am in a perfect flow when it comes to developing new recipes, as you might know I am working on an E-book. In this E-book will be 20 delicious gluten- and lactose free recipes. I already though of some recipes before I started, but along the ways more recipes came to my mind. I already have made half of the recipes and made the pictures as well and the result is mindblowing.
I don’t really know what is happening but all recipes seem to turn out just a bit better and more tasty than all other recipes I have made. And I am going quite out of the box with these recipes, which seems to work. The recipes in the E-book will be recipes for breakfast, snacks and pastry. All recipes are gluten- and lactose free but also easy to adapt to a plant based diet for example. The E-book will probably release in September, but I will of course inform you about it. I liked make this Cheese Cake so much that I also made a vegan ‘Cheese’ Cake for the E-book.
Preparation time: 20 minutes Baking time: 45-50 minutes in total Amount: 1 cheese cake
Small spring form (diameter 20 cm
40 grams coconut oil
200 grams gluten free oatmeal
20 grams honey
8 grams cinnamon
1000 grams quark
200 grams cream cheese (natural)
1 vanilla bean
150 grams blueberries
How to make it
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). First put the coconut oil in a small pan and melt on low heat fire. Make sure it does not boil. In the meantime mix the oatmeal in the food processor with the honey, cinnamon and egg. When the coconut oil has melted you can add it as well. Mix into a nice dough.
Cover the spring form with a piece of baking paper and divide the dough over the bottom. The easiest way to do this i by using a spoon. If it gets a bit sticky you can make the spoon wet and it will get easier.
Make sure the bottom has the same thickness everywhere and bake for approximately 10 minutes in a preheated oven.
You can now make the topping. Put the quark, cream cheese, eggs, vanilla and blueberries in the food processor and mix into a smooth mixture.
When the bottom is ready you can get it out of the oven. Let cool down for a while and divide this mixture over the bottom.
Next bake the entire cake for 35 minutes, pay attention that the baking time can differ per oven. Let the cake cool down a bit and set in the fridge to harden.
You can now enjoy a piece of this healthier Cheese Cake, also really delicious for breakfast. It fills really good because of the healthy ingredients.
