Banana pancakes with red fruit. Healthy banana pancakes are definitely my favorite breakfast. These banana pancakes are the perfect banana pancakes if you ask me and with this red fruit compote you make them even better.

Red fruit compote
Red fruit compote sounded to me always as something difficult that also seemed very delicious. Until I found out that you can simmer red fruit for 5 minutes in a small pan and it turns out to become compote. It doesn’t get easier than that, so now I cover everything with compote. Banana bread, pancakes or yogurt, I love it!
Recipe: Banana Pancakes with red fruit
25 grams (gluten free) oatmeal
3 grams cinnamon
100 grams red fruit
Coconut oil to bake
How to make it?
Mash the bananas in a mixing bowl or put them in the blender and let it mix. Add the eggs, oatmeal and cinnamon to it. Mix (or let mix) into a smooth batter.
Heat a lump of coconut oil in a big frying pan. That way you can bake 3 pancakes at the same time. Use 2 table spoons of batter per pancake.
Bake for about 4 minutes on one side until they feel firm and flip carefully with a spatula. Let them bake for another minute on the other side until done. Continue until you are out of batter.
In the meantime you can make the red fruit compote. Place the fruit in the sauce pan and let simmer for 5 minutes om medium heat.
Keep stirring and you will see that it will become a firm compote after 5 minutes which you can use as a topping on your pancakes.
When you are done baking the pancakes you can stack them. Divide the compote on top of them ad enjoy these love banana pancakes with red fruit.
