Banana Blueberry Pancakes. You already make this gluten free and lactose free pancakes with only 3 ingredients.
You might already know that pancakes are my favorite breakfast. I love to eat them everyday and make them almost every weekend. Also in Spain I regularly made pancakes for breakfast, because why not?! Sometimes I like to think of a new variation to be able to switch recipes sometimes. I thought it would be a good idea to make blueberry pancakes and I had done that before already. But the blueberries fell out of the pancakes and I couldn’t flip them very well, but I was also quite impatient at that time. I decided to start with more patience this time.
And that worked out! Not of all them went that smooth, but it turned out really good. And when the blueberries get war, they get bigger and they sometimes pop. And than you have a warm kind of jam on your pancakes which makes them even more delicious.
Preparation time: 5 minutes Baking time: approximately 5 minutes per pancake Amount: 12 small pancakes
Mash the bananas with a fork, the easiest way to do this is by using ripe bananas. Add the eggs to it and mix into a batter. You can also do this in the mixer which I did also.
When the batter is mixed properly you can add the blueberries. Mix them really carefully through the batter. Make sure the berries are divided throughout the entire batter.
When the batter is ready you can bake the pancakes. It is best to use a big pan because than you can bake 3 pancakes at a time.
My advice is to keep them small, because otherwise they will fall apart if you want to flip them.
Bake them slowly on low heat fire, you do need some patience for it. If you see the berries integrating in the batter and the pancakes becoming dry you can carefully flip them.
Bake them for another minute on the other side. Continue until you are out of batter.
