Last week I already wrote about all the bananas I got from my colleague and I used the properly. I decided to make these delicious cookies with them right away. These cookies are vegan and because of the combination of oatmeal, peanut butter and banana they are very filling.
They could also be perfect breakfast cookies. And chocolate chip cookies for breakfast always seems like a good idea to me.
Recipe: Peanut Butter Banana Cookies
1 table spoon of chia seeds
3 table spoons of water
60 grams spelt flour
80 grams (gluten free) oatmeal
Sip of baking soda
5 grams cinnamon
50 grams peanut butter
20 grams extra dark chocolate
How to make it?
Preheat the oven on 180 degrees Celsius (356 Fahrenheit). Put the chia seed in a glass combined with the water an let stand for a few minutes. If you use a food processor you can put all other ingredients excluding the chocolate in it.
Don’t you have a food processor? Mash the bananas with a fork in a mixing bowl. And add all ingredients excluding the chocolate.
At last add the chia seed to the other ingredients. Let the food processor mix all ingredients into a smooth dough. Or if you don’t use that one, mix with a spatula into a smooth mixture.
Chop the chocolate and at last stir that through the batter. Make sure it is well divided.
Place a sheet of baking paper on a baking tray. Make balls of the dough and flatten them a bit. How many cookies you can make depends on the size of the cookies. So pick whatever you like. Do pay attention that the baking time may differ upon the size of the cookies.
Bake the cookies for about 15 minutes in a preheated oven.
