Farmer wants a wife is definitely one of my guilty pleasures. You don’t have to think about it and can just watch. So I was watching this a while ago and saw that one of the women made a banana bread and covered it with pecans and slices of banana. I really like pecans and decided to make banana bread muffins, because that is something different. The plan was to put 2 through the batter and one in pieces fore some bite and flavor. But automatically I put all three of them in the food processor. Luckily the flavor was good so I didn’t have to change the recipe.
Recipe: Bananabread Muffins
200 grams spelt flour
5 grams baking soda
5 grams cinnamon
20 millilitres honey
50 grams unsalted pecans
How to make it?
Preheat the oven on 170 degrees Celsius (338 Fahrenheit). Put the bananas in the bowl of the food processor. Add the eggs, spelt flour, baking soda, cinnamon and honey to it and mix into a smooth batter.
Next stir about 3/4 of the pecans through the batter and keep the rest for the topping.
Grease the muffin molds and fill with the batter. Because they don’t rise a lot you can fill them up. Chop the pecans and divide on top of the muffins.
Bake the muffins for 30 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
Let them cool down a bit and you can enjoy these delicious Banana Bread Muffins. Delicious as a snack for on the way or breakfast. You can also freeze the muffins.
