Apple Pie with Walnuts

Gluten free apple pie with walnuts, a perfect alternative in your healthy lifestyle. By replacing the honey you can even make this pie vegan!
I have a Christmas break, because I took 2,5 weeks off from my job and had a lot of time to try new recipes. Like this apple pie recipe. On the internet I found an ‘unhealthy’ apple pie recipe. After some research and digging into my own experience I created a recipe based on that recipe. I replaced the less healthy ingredients like sugar and butter and made my own recipe. And honestly I am quite proud of this recipe. It was a really good pie for this first time!​

The cake just got out of the oven and Jens left to a friend. Of course I always want to know what other people thin of my recipes, so I gave him 2 pieces to also let the friend taste it. Approximately one hour later I got the message that the cake was approved by both of them. The next day my parents in law came and they also liked the cake a lot, so this cake was a big success.

  • 200 grams coconut oil
  • 400 grams almond flour
  • 200 milliliters honey*
  • 10   grams baking soda
  • 4     Apples
  • 10   grams cinnamon
  • 100 gram walnuts
* By replacing the honey for a plant based sweetener you can make this recipe vegan.

How to make it?

Preheat the oven on 175 degrees Celsius (341 Fahrenheit). Put the coconut oil in a small pan and slowly melt on low heat fire. Make sure it does not boil. In the meantime mix the almond flour with 150 milliliters of the honey and the baking soda in a bowl.

​When the coconut oil has melted you can add it to the bowl with almond flour. Mix the ingredients all properly, for example with a spoon. You don’t have to mix with a mixer. If you mix properly this will become a nice dough.

When the ingredients become a dough you can make a ball of it. Because the dough is sticky, it is not easy to really let it become a dough. The most important is that it has become a whole. Let the ball for approximately 30 minutes in the fridge. Not too long because than the coconut oil will become hard again and it will be difficult to make it in a shape.

While the dough is getting hard in the fridge, you can work with the apples. Peel the apples and remove the seeds. Cut the apples into slices or cubes. Put the apples in a mixing bowl and add the rest of the honey and cinnamon to it. Mix properly to make sure every piece of apple is covered with honey and cinnamon.

When the apples are mixed properly with the cinnamon and honey, you can ​add the walnuts to the apple. You can choose to chop the walnuts or leave them as a whole or make them really small in the food processor.

You can add whatever you like to the cake, for example cranberries or raisins. You can make the cake to your own liking.

Cover the spring form with baking paper. Grab 2/3 of the dough and divide over the bottom of the form. Make sure it has the same thickness and edges as well. They only have to be approximately 1 centimeter in height.

Add the filling of the apple and walnuts to the bottom. Divide very well over the entire bottom.

At last make the top of the pie. You will need 1/3 of the dough. I wanted to roll the dough and make small pieces into a diamond form topping, but the dough was too sticky and soft. So I made an apple crumble pie.

Bake the pie for approximately 70 minutes in a preheated oven. Pay attention that the baking time may differ per oven. You can now enjoy a lovely piece of this apple pie.
