Apple breakfast crumble with nuts, this gluten free crumble with apple, cinnamon, nuts and oatmeal is a very filling breakfast. Lovely with some yogurt or quark.
The weekend is almost here and for me that means time for a nice extended breakfast. I do like extended breakfasts every day, but in the weekends I take extra time for it. I often make pancakes or mini pancakes and in the winter crumble is one of my favorites as well. I love a warm breakfast and with some yogurt a crumble is a perfect option. I already made one with khaki and pear, but also also one with blackberries in the Summer.
Last weekend I felt like making a nice crumble and the combination of apple and cinnamon popped into my mind. When I made it on Sunday and had the leftovers to work on Monday my colleagues said it smelled like apple pie. And actually that is quite accurate, because this combination of apple, cinnamon and nuts fits perfectly within an apple pie. So actually this is an apple pie breakfast that is healthy as well.

The nuts are not organically available which doesn’t make this recipe organic. All other ingredients are organic.
- 3 apples
- 8 grams cinnamon
- 25 milliliters honey +10 milliliters
- 100 grams unsalted nuts
- 30 grams coconut oil
- 80 grams gluten free oatmeal
- 55 grams buckwheat flour
How to make it?
Preheat the oven on 180 degrees Celsius (372 Fahrenheit). Peel the apples and cut into smaller pieces. Put the pieces in a mixing bowl and add the cinnamon and 25 milliliters of honey. Mix very well to make sure the ingredients as well as the flavors are mixed properly.
Chop the nuts as small as you like. I left them a bit bigger because I like the bite in the crumble.
You can also mix them in the food processor to make them smaller in the crumble. Mix the nuts carefully through the apple/cinnamon mixture and the bottom of the crumble is ready.
You can now make the crumble. Melt the coconut oil in a small pan slowly on low heat fire. In the meantime you can mix the oatmeal, buckwheat flour and the rest of the honey in a mixing bowl. When the coconut oil has melted you can add that to the bowl.
Mix all these ingredients for the topping properly. You can easily use a spoon to do so.
Divide the apple/cinnamon/nut mixture over the bottom of the oven dish and make sure it is well divided. Crumble the oatmeal mixture on top of the apple mixture and make sure the apples are covered.
Bake the crumble for 25 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
