Apple cinnamon muffins


Apple cinnamon muffins, such a lovely combination that never bores if you ask me.

It is already a while ago, but I wanted to make an apple pie. That day was a Holiday, I can’t remember which one, but all stores were closed. The only thing opened was the small stable near our house. They sell all kinds of fruit, vegetables and juices. There is a small box to put the money in and you can leave with your groceries. I went to buy a few apples, but returned with a big bag of apples, small apples but still a lot of them. And what do you do with that many apples? I thought of a lot of recipes with apple haha. One of them were these muffins with cinnamon and apple, but also apple crumble, apple pie, smoothies with apple, you name it to get rid of the apples.

The smoothies that also contain apples are already online, but not all baking recipes are online yet. Today the apples muffins with cinnamon. A bit of a Winter recipe, although apple can also be refreshing on a Summer Day.

Ingredients

  • 50 grams coconut oil
  • 300 grams spelt flour
  • 5 grams baking soda
  • 10 grams cinnamon
  • 2 eggs
  • 250 milliliters plant based milk
  • 50 grams honey
  • 1 apple

How to make it?

Preheat the oven on 200 degrees Celsius (372 Fahrenheit). Put the coconut oil in a small pan and melt on low heat fire. As soon as the coconut oil has melted you can set aside the pan.

Grab the mixing bowl and mix the spelt flour, baking soda and cinnamon into a a whole.

Mix in a separate bowl the melted coconut oil with the eggs, plant based milk and honey.

When you have properly mixed the ‘wet’ ingredients you can also add the ‘dry’ ingredients to it.

Mix the ingredients and make sure it becomes a whole.

Next peel the apples and cut into smaller pieces.

When you have cut the apple you can mix it through the batter. Divide the batter over the muffin molds. The batter doesn’t rise very much so you can fill them up a bit.

With this amount of batter you can make approximately 11 muffins.

Bake the muffins for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven.

You can now enjoy these nice fresh/sweet muffins with apple and cinnamon.
