Apples, apples and even more apples
Recipe: Apple Cinnamon Muffins


Ingredients
50 grams coconut oil
300 grams spel flour
5 grams baking soda
10 grams cinnamon
2 eggs
250 millilitres plant based milk
50 grams honey
1 apple
How to make it?
Preheat the oven on 200 degrees Celsius (372 Fahrenheit). Put the coconut oil in a small pan and melt on low heat fire. As soon as the coconut oil has melted you can set aside the pan.
Grab the mixing bowl and mix the spelt flour, baking soda and cinnamon into a a whole.
Mix in a separate bowl the melted coconut oil with the eggs, plant based milk and honey. When you have properly mixed the ‘wet’ ingredients you can also add the ‘dry’ ingredients to it. Mix the ingredients and make sure it becomes a whole.
Next peel the apples and cut into smaller pieces.
When you have cut the apple you can mix it through the batter. Divide the batter over the muffin molds. The batter doesn’t rise very much so you can fill them up a bit. With this amount of batter you can make approximately 11 muffins. Bake the muffins for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven.
You can now enjoy these nice fresh/sweet muffins with apple and cinnamon.
