SPONSORED – Cinnamon Pancakes with Apple, a super delicious and healthy breakfast which is easy to make. These healthy pancakes are gluten free and lactose free and you can vary with them if you like.
Last week I had a meeting with Jordy from Realflavors with whom I already have a cooperation at the moment. Realflavors is a webshop in healthy, organic nutritional products. This can be baking products like flour, but for example also herbs and spices. I got to take a look in the warehouse where all these lovely products are stored and hear the story of Jordy and of course we also spoke about our cooperations. Something very cool is coming up, but I am not going to mention too much yet. I can say that I got to take home some beautiful products to try and to inspire you with. Among these beautiful products were also rice flour and almond flour from Bauckhof and I suddenly had pancake cravings and made them with apple and cinnamon. In the morning I already had eaten pancakes, but those ones were different and I just wanted to have these. When it is colder I usually prefer a warm lunch ad a combination of apple and cinnamon fits perfectly with that.
I make pancakes with apple more often, but I find it quite difficult to get them well done and flip carefully. So I decided to cut the apple as flat as possible and that went surprisingly well, they got really delicious!
Preparation time: 5 minutes Baking time: Approximately 5 minutes per pancake Amount: 5 pancakes (depending on the size)
First put the flour in a mixing bowl or the bowl of your mixer if you want to use that. Add the eggs, almond milk, cinnamon and honey to it and mix into a smooth batter. You can let the mixer do it, but if you don’t have that a spoon or spatula will work just fine.
When you have a nice and smooth batter, you can peel the apple. Cut into small pieces, that will be easy in the pancakes later. Otherwise it will become difficult to get them well done or to flip them. Mix the apples through the batter and make sure they are well divided.
I used half of an apple through the batter. You can use the rest as decoration,
Heat some coconut oil or butter in a pan. Use half a ladle of batter per pancake and try to make the pancake as thin as possible. That is quite difficult, because the batter is a bit thicker because of the apple. Make sure it melts slowly on low heat fire, otherwise they are brown on the edges, but not yet done. When the edges turn brown and the pancake is almost done, you can carefully flip it. Bake for another minute on the other side. Continue doing this until you are out of batter. Depending on the size you can make approximately 5 pancakes with this amount of batter.
You can now enjoy these lovely healthy apple cinnamon pancakes. Nice to put some extra apple and cinnamon on top of them when you are going to eat them.
