Autumn
The Autumn has really begun in the Netherlands with a lot of rainy days the past few weeks. And for me Autumn means warm flavors and the combination of apple and cinnamon represents that for me. So when I stood in the kitchen and thought about what I would bake, that combination popped into my mind instantly. I already made gluten free apple pie, apple cinnamon muffins and apple cinnamon pancakes. But I never made cookies before so it was about time to do so and they turned out perfect!
Recipe: Apple Cinnamon Cookies

Ingredients
100 gr. oat flour   5 gr. cinnamon
80 gr. almond flour 50 ml. honey
60 gr. peanut butter 1/2 apple
30 gr. unsalted almonds
How to make it?
Preheat the oven on 175 degrees Celsius (347 Fahrenheit). Put the oat flour in a mixing bowl and add the almond flour, cinnamon and peanut butter. Mix properly.
Peel the apple and cut into pieces, chop the almonds and add both to the dough. Mix properly and make sure they are well divided.
Cover a baking tray with a sheet of baking paper and you can make the cookies. Make small balls of the dough and flatten them a bit on the baking tray. You can decide for yourself how big you like to make them.
Bake the cookies for about 15 minutes in a preheated oven until they are gold brown and done. Pay attention that the baking time may differ per oven.
