Strawberry Pancake Cake, a delicious breakfast for a luxury look. The Greek Yogurt makes this a refreshing breakfast recipe.
Last week was Mothers Day and now that I think about it this could have been a perfect breakfast to surprise your mother with. Unfortunately it is too late for Mothers Day but it is of course always nice to surprise someone when they don’t expect it. That really makes it a surprise because everybody expects a nice breakfast at Mothers Day while nobody does the week afterwards which makes it an even bigger surprise. Quite a good idea to make this breakfast unexpected for your mother or somebody else. Nowadays I bake pancakes almost every weekend. Jens told me last week, you really do make pancakes every weekend, don’t you? And he is right and I love them and even more because they are healthy as well. Yes it does take some extra time, but while I am baking them, I can clear the dishwasher, boil an egg and make myself a cup of coffee so actually it saves me time haha. And I also like to vary with recipes and that doesn’t always work out well. That makes me a bit frustrated sometimes, because I know which recipes are delicious and when I try something that doesn’t work out I always wonder why I am.
Lately I tried to make strawberry pancakes, but they didn’t turn red and I threw more strawberries in which messed up the structure and they fell apart. And I couldn’t fix it with Greek Yogurt also. But it brought me an idea, my favorite pancake recipe combined with strawberries and Greek Yogurt in the form of a pancake cake, that could one be a success which it was indeed!
Baking time: approximately 5 minutes per pancake
Amount: 1 cake consisting of 5 pancakes (2-3 persons)
- Frying Pan (21 cm diameter)
- Spatula (for flipping)
How to make it?
First put the flour in a mixing bowl and add the honey, eggs and half of the plant based milk to it. Mix into a smooth batter with a spatula or a spoon. I used a mixer. When the ingredients are mixed properly you can add the rest of the milk and at last stir the grated coconut through the batter.
|Melt some coconut oil or butter in the pan. Use approximately half of a ladle of batter per pancake. If you use more the pancakes will get really thick, which is not tasty and will take longer for them to be ready also. Bake the first pancake, when the top gets dry you can carefully flip it and bake for another minute on the other side. When the pancake is ready you can lay it on a plate and cover with some yogurt and strawberries.|
When you have covered the pancake you can bake the next one. When you have baked this pancake you can lay it carefully on the other pancake. It is important for the pieces of strawberry to not be really thick, because than it will be difficult to cover them. You can also cover this one with the strawberries and yogurt. Continue doing this until you are out of batter. You can cover the last pancake how you like it. I used some extra yogurt and strawberries to top it off.
